Chilli Cayenne
Tender Perennial
Cayenne produces a prolific yield of long red chillies that are extremely tasty and very hot. This tender perennial will come back year after year but must be protected from cold conditions. Storing the plants in a conservatory or greenhouse over winter will ensure you have deliciously hot peppers year after year. Birds Eye peppers score 30,000 - 50,000 on the Scoville Heat Scale.

Sow Indoors: January - April
Transplant: May - June

Sow seeds into trays of good quality compost and lightly cover. The earlier you sow chilli seeds, the hotter they will be. Place tray into a heated propagator or clear bag in a warm sunny position. Chilli seeds need to be grown in heat, a warm greenhouse or conservatory are ideal. Germination should take between 10-21 days. Once seedlings have 3 true leaves they can be transplanted into individual containers and should be kept warm.
Chillies should be kept indoors until outdoor temperatures reach at least 18 degrees Celsius but ideally, they should be kept indoors or in a greenhouse. If plants are to be transferred outdoors, they should be hardened off by placing them outdoors during the day and bringing them back indoors at night. This should be repeated for 10 - 14 days.
Chilli peppers can be harvested once the fruit is firm. The redder the chilli the hotter it will be.

Coriander
Hardy Annual
Quick growing herb thatÕs grown for its young leaves. Often used in Indian and Thai cuisine, this aromatic herb is great when added to meat dishes and finely chopped and added to chutneys and curries.

Sow Indoors: all year round to grow indoors. Sow from February to May for transplanting outdoors.
Transplant: April - July
Sow Outdoors: May - August
Harvest: January - December

Sow Indoors
Sow seeds into a tray of good quality free draining compost. Lightly cover with compost or a fine grit and place in a propagator or seal inside a clear bag. This will create humidity to help start germination. Place in a light warm location until seedlings start to emerge, the bag or lid can then be removed but seedlings must be kept warm and away from drafts. Germination can take 14 - 21 days.
Once the seedlings are large enough to handle, they can be transplanted into larger pots and placed in the kitchen or outdoors. If plants are to be placed outdoors, they must be hardened off by placing them outdoors during the day and bringing them back indoors at night. Repeat for 10-15 days. Plants can be planted into beds and borders but should be protected from slugs and snails.

Sow Outdoors
Seeds can be sown direct outdoors into pots once the risk of frost has passed. Thin seedlings to 30cm apart once they are large enough to handle.
Harvest leaves regularly. Tear rather than chop to help retain the plants aroma. Leaves can be dried or frozen. For a fresh supply of leaves indoors year-round, sow seeds every 12-14 weeks.
